Carrie Undewood is looking adorable on the cover of the January 2010 issue of SELF Magazine.  The colors really make this issue stand out!

Check out some highlights below from her interview with SELF.

On her New Years resolution:  “I’m not really one for New Year’s resolutions. Every year I just try to be mindful of who and how I want to be.”

On her biggest pet peeves:

1.  Animal neglect ” I hate it when people don’t take care of their pets. It’s important to spay or neuter them.”

2. Kitchen chaos “It drives me crazy when people put stuff in the wrong place. When I have people over and they try to help clean up, I’m like, ‘No, I’ve got it!’ I may not be able to control every aspect of my life, but I can control where my pots go and what color cups are lined up where. The red ones go here.”

On her workout motivation tricks:

1. Make exercise accessible. “I have Exercise TV on cable. Jillian Michaels’s videos will kick your butt. She’s my trainer, and she doesn’t even know it!”

2. Work toward an event. “Everybody has things they want to look nice for: anniversary, birthday, reunion. I’ll think to myself, Oh, that award show is coming up. Or, I have a photo shoot in four days! It’s nice to set goals.”

3. Revel in success. “I love it when I feel good about myself. I’ll look at a photo and think, My arms look great!-and then I go work out my arms. Once you’re enjoying things about your body, you realize how much you want to keep them that way or make them better.”

On how she blows off steam:  “If I’m ticked off, I’ll get a punching bag and beat the crap out of it.”

On what she watches on TV: “I love Monday Night Football and The Biggest Loser, and I rarely miss an episode of American Idol.”

On her goals:

1. Start a family. “Not that I have a husband to have one with yet, but someday I’d like a family-not a big one, but not a small one either. Two kids is good; three is fine. Four? Somebody’s getting something done, because we ain’t having five!”

2.  Give it all away. “I want to give more back. Before I die, I want to get rid of all my money. Recently, I started a foundation to benefit my hometown. I’m looking forward to doing a lot of good for a community that’s a big part of why I am who I am.”

On her favorite things to snack on:

1. 250-calorie DI Y pizza “For the crust, I use a Flatout tortilla, which has fiber and crisps up nice in the oven. Then I measure ¼ cup of sauce and ½ cup of fat-free or 2% cheese and load it down with my favorite veggies. Really good!”

2.  Preshow energizer “If I eat too much before a show, I just want to sit down. Too little, and I’m starving. So I eat something small, like Quorn, a tasty meat-free protein, and green beans.”

On American Idol:  “I give out my phone number to the contestants freely. I also like to send a present for making the top 10. I’ll send a dog tag necklace from Tiffany and put ‘Congrats on the top 10! Love, CU’ on it.”

“I was surprised the Paula thing didn’t work out. But you knew that whoever they were going to get to fill Paula’s shoes had to be able to make the contestants feel good about themselves, even if they didn’t do that great a job, and Ellen is one of the most positive people I’ve ever met. I love her!”

On her happiest life moments:

1. “Winning American Idol in 2005″
2. “Being named Entertainer of the Year at the Academy of Country Music Awards in ‘09″
3. “Vacationing with my mom and two sisters. Last year, I took them to London, Venice and Rome. So fun!”
